Fundamentally, though, it seems l𓆉ike you pushing back on the game rather than the other way around. The story gives you your background very quickly after your tutorial stage is over. It's in your first conversation with Varric in the lighthouse. Would it have been nice to be able to play that background like we did in Orgins? Yeah, of course it would, but that doesn't mean it's a big delay in information. The problem is: this is not DND; they cannot accommodate any choice the way a DM could. Wrapping up the storyline from other games required even more limitations, and I think they did a fairly good job. Roleplaying was limited yes, but no more so than in any Final Fantasy game...
Yes, this is different from previous DA games, but every DA game has approached ge mechanics and role playing differently. It's new, and we're all getting used to it. In my opinion, you seem like you were expecting something like orgins, but you got something new instead. Now you know what you're wo♔rking with🀅 in your next playthrough, and you can build you character idea with the limitations in this game.
It is a🦩lso seems like your character ide꧂a was routed in Southern Thedas lore. We are not in Souther Thedas any longer - the circles in Tventir are far different. The treatment of other races is different. We are in locations we only heard rumors of before (unless you read the books, which I never did). The backgrounds are going to reflect that. A mage joining the wardens would be more likely to be working for omething greater than herawlf. The magisterium would have given her glory for less risk. We've got to push out of our southern thedas bias when considering Rook as a character.
My p💮oint being, saying there is no role-playing is a gross exaggeration - you just can't play the character you envisioned because it is not within the limits of the game. That's sa꧒d, but if you work with the game, it'll be more fun for you.
