Most of the GBA Bowser's Castle stages have returned in later Mario Kart games like Wii and DS, and while those versions are better due to more refined gameplay, they still lack distinct features or unique ideas. There's still fun to be had, but four of the same track is too much.

Bowser's Weird Underwater Phase

If Bowser's Castle is like a fiery hot sauce, then the one from Mario Kart 7 is mild. The usual enemies and obstacles are toned down for a strangely uncharacteristic underwater segment. Plus, the lack of memorable twists makes this one of the more forgettable versions.

This track has the most obstacles out of any variation of Bowser's Castle, including spinning fireballs and mini volcanoes that explode when you pass by. Everything combines to create a satisfyingly challenging thrill ride that enthralls you until the end. It's the best version of Bowser's Castle, and one of the greatest Mario Kart tracks ever.
