Navigate your cursor to the top of the little dice icon in the lower left corner and click on it to bring up a selection of all the current dice available. You can sel♋ect the Scuffed Metal and Behir Blue dice, at the very least.

On consoles, the option to choose your dice is a bit more noticeable, as you will see a large 'Customise Dice' text on the bottom of the screen that can be accessed by clicking in the Left Analog Stick. Doing this will bring up the list of available dice, enabling you to choose the one you like!
